Healthy Homemade Mayonnaise

2 Cups Olive Oil
2 Eggs (room temperature)
1 Tbs Coconut Vinegar
2 Tsp Mustard
1 Tsp Honey
1 Tsp Salt

Combine eggs, vinegar, mustard, honey and salt with immersion blender.  Slowly add oil while blender is running, mixing until a mayonnaise has formed and ingredients are well blended.  Store in fridge.

Raw Avocado and Lemon Salad Dressing

The Raw Avocado and Lemon Salad Dressing makes enough for 5-10 salads

Ingredients

1 large avocado ripened (skin and pit removed)healthy-lifestyle
1/4 cup (62.5 ml) extra virgin olive oil or avocado oil
1/4 cup water
1/4 cup fresh Italian parsley (flowers only) or cilantro
1 small clove fresh garlic
Juice of 1/2 lemon
1 tsp (5ml) agave or honey (optional)
Salt and pepper to taste

Instructions

Place all ingredients except oil and water in the bowl of your mixer. High-speed blender works great, too.) While your mixer is going, slowly add the oil followed by the water. Puree it all until smooth. Add a bit more oil and water to get the right thickness or texture you want.

Refrigerate for about an hour before serving. Enjoy it all week if it lasts….
